Cheesy Black Bean and Artichoke dip

2-15 oz cans black beans, drained

1-10 oz pkg frozen chopped spinach, thawed and drained

1/2 cup medium hot salsa

1-4 oz can chopped green chilies, undrained

1 tsp minced garlic

2 cups shredded low-fat cheddar cheese

1-14 oz can artichoke hearts, chopped

1/2 cup pepper jack cheese

Preheat oven to 350 degrees. Combine all ingredients, except pepper jack cheese and place in a casserole dish or a 10 inch pie pan. Sprinkle pepper jack cheese on top. Bake for 30 minutes or until the cheese in bubbly and golden. Serve with baked tortilla chips. Serves 6-8.

Zucchini bread
3 eggs
1 cup oil less 2 Tbsp.
2 cups sugar
3 cups flour
1 tsp. baking soda
1/4 tsp. baking powder
 1 tsp. salt
3 tsp. cinnamon
2 cups grated zucchini
 1/2 cup nut or raisins (optional)
~Mix eggs, oil, and sugar. Alternately add zucchini and dry ingredients to the egg mixture. Stir in nuts. Pour into two greased and floured bread pans or tube pan. Bake at 325°F for 1 hour or less if toothpick comes out clean.

2 1/4 cups all-purpose flour

1 tsp. baking soda

2 sticks butter or margarine, softened

3/4 cup packed brown sugar

1 tsp. vanilla extract

2 eggs

2 cups semi-sweet chocolate chips

~Preheat oven to 375 degrees F. Combine flour, baking soda, and salt in a small bowl. Beat butter, sugar, brown sugar and vanilla extract in a large mixing bowl until creamy. Add eggs one at a time, beating well after each addition. Gradually add in flour mixture. Stir in chocolate chips. Drop by rounded tablespoons onto ungreased baking sheets. Bake for 9-11 minutes or until golden brown. Cool on baking sheets for two minutes; remove to wire racks to cool completely.
